Simon Soar Over the past 16 years Simon has managed and consulted a wide variety of reputable establishments, spanning from Australia to Brighton, in particular Cocktail Manager for Wildfire and Bar Manager to Grand Jersey. Simon was also sourced as Drinks Consultant for the island’s uber chic nightlife offering to the cocktail scene, Tanguy’s. He last worked as the Bar Manager at La Cala Night Club, before going full time into Bar Technics. Whilst exercising his skills in Brighton, Simon managed Suga Qube, a well-renowned hotspot. He then became Head Bartender at Above Audio, a known haunt for local cocktail connoisseurs on the Brighton sea-front. On his departure, Above Audio Cocktail Bar, had accumulated a number of national awards. Simon established Bar Technics in early 2006, responding to the island’s demand for cocktail resources. Since its nascent, Bar Technics has expanded to accommodate a high demand for private and corporate functions, bar consultation, outside events and competitions; whilst offering specialised training programs and providing befitting personnel for functions. Simon has also been training and assisting with a number of venues in Guernsey, notably Laska, Cobo Bay Hotel, The Farmhouse, The Doghouse, Mora's, Fregate Hotel and The Rock Garden at Fermain Valley Hotel. Simon then shifted field slightly in the industry and toke on the position of Brand Development Manager for JJ le Sueur, a high profile drinks agency based in the Channel Islands, utilising his knowledge to continue supporting venues and spreading his passion towards drinks. Recently Simon developed and launched the multi facility venue, Cheffins at the Beaumont Inn, where he took a short term General Manager position to design and implement every aspect of the venue, launching a multi million pound project. He can now be found holding the position of General Manager at the newly opened Cow & Lobster, where he came on board to help set, launch and run the latest offering to Jerseys hospitality scene.
Bar Technics has also started venturing into the yachting world, providing specific training to stewardesses who have a different requirement of standards and necessities when making drinks, a field we have greatly enjoyed teaching in. Our piece de resistance so far was the honour of providing the drinks training for M/Y Solandge and also appearing on the Yachting Pages stand by invite to showcase our skills.
